An anaerobic natural from our newest Ethiopian partners - Ephtah Specialty Coffee, a team dedicated to producing incredible coffees and tangibly changing the lives of those who they source coffee from. This coffee is bold and boozy with a sparkling acidity. It's incredible complexity made it very difficult to select only three flavour notes but it's already a firm favourite amongst the team!

Ephtah Specialty Coffee was founded to create sustainable, collaborative supply chains that benefit both customers and farming communities, with a strong focus on empowering women as key agents of social and economic change in Ethiopia. With deep local knowledge and a commitment to delivering exceptional quality, Ephtah carefully processes its coffees at the Lalesa station using anaerobic fermentation methods. Each lot is sealed in airtight barrels to prevent oxygen exposure, then fermented for varying time spans to develop unique flavour profiles. This coffee was fermented for 9 days in plastic barrels and following fermentation, the coffees are dried for 10 to 15 days, depending on local weather conditions—ensuring quality at every step of the process.
Been having this as a pour over and filter and it’s been an absolute treat. Definitely adding it to the next order again.
The batch was great. I noticed the flavour profile was a bit blend at first only to realise it was most likely recently roasted and I may have needed to let it sit for at least a weak before opening. I may have not noticed but I do with the roast date could be clearly marked. I wasn’t sure if what was reflected was the roast date or dispatch / purchase order date. That said, the flavour profile has been enhancing over time and product has ultimately been as expected.
