Our first washed coffee from our Ethiopian partners, Ephtah Specialty Coffee, exhibits all the classic qualities we love about washed Ethiopian coffee. It's bright, it's clean, it's complex and unique. Think fresh juicy nectarines with a delicate bouquet of white florals like honeysuckle and jasmine. A sweet demerara sugar note rounds out the cup with a bright lemonade citrus characteristic!

The Producer

In Ethiopia, coffee is far more than a crop — it is woven into everyday life. Grown in the highlands of Gedeb, Gotiti coffee reflects this deep cultural heritage while supporting the hundreds of smallholder farmers and seasonal workers who contribute to each harvest. Through upfront payments, quality premiums, educational support, and long-term community projects, Ephtah Specialty Coffee is committed to building a more sustainable future for the people behind the coffee, with a particular focus on empowering women as leaders of social and economic change.

At the heart of Gotiti’s character is a meticulous processing method rooted in tradition and craftsmanship. Coffee cherries are grown naturally beneath the shade of Ensete trees before only the ripest fruit is hand-selected from surrounding farms. After harvest, cherries are floated to remove defects and then depulped and carefully sun-dried on raised beds for 12 to 15 days under in the sun. Once dried, the beans are hand-sorted by local women, whose attention to detail ensures exceptional consistency and quality. This patient, hands-on process contributes to the vibrant sweetness, complexity, and clarity found in the final cup.

Ephtah Specialty Coffee was founded with a vision of creating transparent, collaborative coffee supply chains that benefit producers, exporters, roasters, and communities alike. Combining deep local knowledge with an international perspective, Ephtah has grown into one of the largest washing and drying operations in the Gedeb region, while remaining focused on sustainability and long-term impact.
